August Recipe: Eclairs

Our Eclairs

1 pint of water
8oz butter – cubed
Pinch of salt and sugar
12oz of flour
8 eggs

  1. Boil the water, butter and salt
  2. Add flour and mix with a wooden spoon until thick, a cakey dough will form
  3. Put on the heat and cook for 2 minutes
  4. Transfer to a bowl and whisk until it cools a little
  5. Add 1 egg at a time, combining well while whisking until the mixture drops off the spoon slightly
  6. Pipe into long shapes ( like fingers ) and bake at 200c for 20-25 minutes or until golden on top.
  7. Allow to cool and then cut the fingers in half
  8. Fill with cream or jam or with anything you like
  9. Top with chocolate or caramel
