Chocolate Moelleux RecipeThis recipe makes 6-8 molds

Ingredients for Moelleux

  • 250 grams of dark chocolate
  • 250 grams of butter
  • 8 eggs
  • 225 grams of caster sugar
  • 75 grams plain flour

Ingredients for the Ganache

  • 200 grams of chocolate
  • 200 ml of cream

Method

First heat the cream until boiling, then whisk in the chocolate until smooth
Pour into a thin square lined tray and leave to set until hard
Melt the chocolate and butter in a microwave or over a bain marie until combined
Whisk the eggs and sugar in a separate bowl until well combined
Fold in the flour
Fold in the chocolate mix and whisk to get rid of any lumps
Let the mix set in a tub for 24 hours
Pipe mix into greased fondant molds, put a square of ganache in the middle
Bake at 180 for 8-15 minutes depending on your oven
Should still be gooey inside
